Job Location: New YorkSalary: $100,000 - $130,000 per yearMy client is a well-established, high-end steakhouse looking to bring on an Executive Chef to spearhead a new location opening. This individual will have a strong focus on customer experience; management and team culture and retention; and core financial metrics.Building on the outstanding practices in place in the UK, the role will be influential in helping develop the systems and practices to support the operation of exceptional US restaurants. Responsibilities of the Executive Chef
  • Implement effective controls of Food COG's, Labor and Direct Expense cost.
  • Implement and oversee effective waste management controls.
  • Analyze and assess current supply chain and procurement processes to ensure we are receiving the best quality product in the most cost-effective way.
  • Work in collaboration with UK Corporate Universal Chef and from time-to-time Owner & Founder in menu development and menu engineering
  • Train, develop and manage all BOH management team, which priority includes 2 Executive Sous Chef, Chef Cuisine, & 2 Sous Chefs but will also include non-management staff.
  • Work closely and collaboratively with Executive General Manager of the Chicago location and front-of-house key leaders in ensuring all food standards are followed and adhered to, training on new menu items and leading educational briefing (pre-shifts) to the teams.
  • BOH lead-by-example on company culture policies and procedures
  • Private event space experience (banquets, weddings, full buyouts, etc.) menu creation and development.
  • BOH Specialist in all key stations which includes but is not limited to prep, expediting, etc.
The ideal candidate:
  • 3- 5 years in a Chef de Cuisine/ Executive Chef role
  • Experience opening a new restaurant
  • Experience executing private events/ large buy-outs
  • Experience in building systems for scalability and operational efficiency, which include financial, scheduling, labor reservations and inventory systems.
  • Passion for cooking and enjoys developing a team.
  • Local Chicago credibility
  • In depth understanding of supply chain, vendor management/ relations.
  • Able to lift 30+ lbs.
  • Fluent in both written and spoken English.
  • Demonstrate positive leadership characteristics, which inspire team members to meet and exceed standards.
  • Polished personal presentation: grooming meets Company standards, as outlined by Employee Handbook.
  • Communicates information effectively and efficiently.
  • Able to work nights, weekends and holidays, and variable schedule, per the needs of the business.
  • Ability to travel when necessary.
  • Ability to walk, stand, and/or bend continuously and for extended periods as required to perform essential job functions.
