New York, NY, USA Req #465 Sunday, January 30, 2022 The Bakers need to meet the daily production goals for baked goods. For a bread baker, that means preparing the dough, letting them rise, shaping them, proofing them, and finally baking and cooling them. When baking viennoiseries, you will prepare or thaw the dough, then shape and fill them as needed. The Bread Baker will bake breads according to Maison Kayser's unique recipes and will ensure that the products produced in the bakery in the bakery meet our quality standards while maintaining a clean and sanitary food area.

Responsibilities

Check production schedule to determine variety and quantity of goods to bake

Measure and mix ingredients to form dough or batter according to recipes

Roll, cut, and shape dough to form rolls, bread, and related products

Cut, peel, and prepare fruit for bread fillings

Place dough in pans, molds, or on sheets and bake in oven. Observe products while baking and adjust controls

Mix icings and other toppings and decorate breads, and other baked goods

Use a variety of kitchen tools, including electric mixers, pans, rolling pins, and cutting tools

Monitor baking process to identify needed adjustments

Get information from production schedules and recipes

Handle and move ingredients, tools, and cooking pans

Control mixing processes and oven controls

Implement products according to recipes

Education and Experience

Minimum 1 year of experience in bread and related production

Degree from a post-secondary culinary arts training program is highly preferred

Experience with an oven is highly preferred

Must have completely open availability to suit the 24-hour baking needs of Maison Kayser

Be passionate about the food industry with a strong interest in high quality products

Strong organizational and decision-making skill, along with the ability to recognize what needs to be prioritized

Physical Requirements

Must be able to work shifts up to 10 hours while standing or walking to perform essential functions

Will be required to lift up 50 lbs during the course of the workday

Must be able to push or pull up to 150 lbs in duration of shift

Will require bending, stooping, and occasional use of ladder

Will work with ovens in high temperatures and also within the cooler temperatures during the shift

Must be able to work at multiple locations during the same shift as needed

Must be able to communicate effectively with management and team members
